I have usually added pork meat to my burger meat so it has some moisture and it also gives it a nice flavor. Many people don't like the texture of ground venison and it is pretty dry.

Venison should, of course be cooked to a well-done state, but you don't have to over cook it for it to be safe to eat - if its done properly it should still be moist and tender. All tallow should be trimmed away and as much of the silvery-colored membrane as possible should be removed from the meat. The strong taste comes from the tallow and from the connective tissue of the meat. It should be hung in a cool place and should only hang for less than 24 hours before its cut and wrapped for freezing or cooked. First of all, many people don't treat the meat the same way they'd treat a beef - meaning you'd never think of strapping a cow onto your truck and driving in the warm sun for 4 hours - you shouldn't do it with venison either! Venison should be gutted and hung as soon as possible after its killed. I know many people object to the 'wild' or 'gamey' taste of venison, but I think the taste of the meat is determined in large part on how it is handled and cut up.

Well, maybe apple harvesting comes in a very close second! We had our first venison heart for dinner tonight! That's always our favorite - nothing else compares, although having a freezer full or shelves of canned venison is a very satifying feeling, too. That's really all you need, but if you want to jazz it up a little you can add some fresh thyme, sage or rosemary to the grill when cooking.For me, nothing signals fall like deer season. Generously apply a little oil, salt and pepper to all surfaces of the meat - this will help achieve that crispy exterior when grilling. New Zealand Farmed Venison is naturally rich and flavoursome, so it's best to keep your seasoning simple. If you don't have time to season the meat in advance, season generously right before grilling to ensure optimum flavour and tenderness. If you are grilling a 250g steak, season 40 minutes prior to grilling. As rule of thumb you want to allow about 1 hour per 500g of meat, so if you are cooking a 1kg roast, you want to season 2 hours before cooking. If you cook the meat before the juices are allowed to reabsorb, it will turn dry and tough. It takes at least 40 minutes for these juices to reabsorb into the meat, along with the delicious saltiness from your seasoning. When you season venison, it draws moisture from the meat through the process of osmosis. Whatever you do, don't season between 3 and 40 minutes before cooking, and here's why: You have two options here - you can season your venison 1 hour before cooking, or right before you put it on the grill. Here's a few tips to make sure you give your venison the love and care it deserves: When done improperly, it can spoil the taste and texture of even the most premium cuts. After roasting the fillet for 10 minutes, remove and check the internal temperature with a meat thermometer - cook to 52-55 degrees Celcius (135F) for rare-medium rare. If you are using a grill, sear the meat for one minute per side followed by 15 seconds around the edges. Make sure the meat is seared on all sides to lock in those flavourful juices. Sear for 10 seconds on each of the remaining sides, then baste in butter or oil for a further 20 seconds. Sear for 40 seconds on the largest side, then flip and sear for another 40 seconds. Venison is exceptionally lean and tender, so only needs the bare minimum of cooking. Sear on all sides to lock in the moisture.
